A PROJECT FOR FUND RAISING AND COMMUNITY DEVELOPMENT





RECIPE FOR THE WEEK OF APRIL 4

Jen’s Banana Bread
Doris Meadows

Yields one 9" pie.


2 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 shakes nutmeg
1 cup sugar
1/2 cup vegetable oil
3 eggs
3 overripe bananas, mashed
1 tsp. vanilla
baking spray
Optional Additions: Chocolate chips, raisins, chopped walnuts, pecans. Add in one or more, if desired.

Preheat oven to 325º.

Combine the first four ingredients together.

Whisk sugar with oil until it’s like wet sand.

Whisk in eggs one at a time and keep beating until thick and frothy.

Beat in vanilla and mashed bananas.

Fold in above dry ingredients until incorporated.

Prepare loaf pan(s) with baking spray and fill with mixture.

Bake for 40-60 minutes depending on size of pans used.
